comtemporary macrobiotic cuisine by mái
what is a ‘macrobiotic lifestyle?’
the greek words for ‘large’ (macro) and ‘life’ (bio) have been applied to describe a way of living and a philosophy that have been associated with asian cultures and cuisines for thousands of years.
the
essence of macrobiotic theory is that our daily intake of food and our lifestyle have a cause and effect relationship on our health.
in other words, our ongoing daily choices in life will ultimately determine our quality of health.
as alex jack, a highly respected senior macrobiotic teacher, writes in the book of macrobiotics:
“…the term (macrobiotics) became synonymous with a simple, natural way of life, including a diet largely centered around whole grains and vegetables.”
what are the key features of the cuisine?
the macrobiotic diet aims to achieve balance based on the traditional japanese way of eating, featuring whole grains, fruits, vegetables and small amounts of fish. macrobiotic dieters aim to eat a diet that comprises roughly 50% whole grains, 25% seasonal cooked or raw vegetables, 10% beans or fish, 5% sea vegetables (such as seaweed), 5% soup and 5% seeds, fruits and nuts.
